Brown Rice Salad
1cup small grain brown rice
1 sliced red bell pepper
4 stalks sliced celery
1 cup raw sweet peas (or bean sprouts) whatever is in season.
1/2 cup dried cranberries
1 cup sliced almonds
DRESSING:
1/4 cup balsamic vinegar
2 tblsp. agave nectar
2 tblsp. sesame oil
I tweak this recipe all the time, to be truthful I never really measure anything. I put (oranges) mandarins in when they are in season. I have also used sunflower seeds when I was out of almonds. You can make it your own. It's the best feel good vitamin B energy booster. Good for breakfast, lunch or a great side dish. Make is once and you'll be hooked.
