Way out West, we are fortunate to have so many foods from our yards virtually year round. I'm so grateful to have the freshest the season has to offer. Most of us love citrus, but may wonder if a persimmon or pomegranate is worth exploring. Yes, even for picky eaters. I got my boys to try and love them in this colorful seasonal salad.
3 peeled and sliced Persimmons
2 sliced pears
2 peeled tangerines
(any orange citrus)
2 stalks of celery
seeds from half a Pomegranate
2 small jalapeno (to your taste)
Walnuts (i didn't measure)
1 tblsp honey
Let this sit at least a half hour to marinate the honey, juice from the orange and heat of the jalapeno. It only gets better and the citrus keeps your pears from browning. I still have jalapenos in my garden, and they aren't too hot, so be careful but do try a little heat. If you need a substitute, try cinnamon, very yummy with persimmons. I served with a leafy salad and quinoa. Also is wonderful with muesli in the morning.
