Love being crabby

Real crab is my favorite! It's also hard to clean and expensive. Imitation crab has extra starches added to the fish to give it the crab texture. However, some people don't like the real deal and this recipe is easy, low in calories and delicious.
16 oz pack imitation crab
1 sliced small onion
4 sliced large celery stalks
Dill, about 1/2 cup cut
Dressing: 2 Tbsp. light sour cream, Vinegar

Rinse crab, then marinate crab in 1/4cup vinegar an hour or overnight is fine. If you don't have time, make the whole batch and let it sit an hour to meld flavors, cooked shrimp is a good substitute. Mix everything and add 2 Tbsp of low fat sour cream and 2 Tbsp. vinegar, this gives it a creamy texture but low on fat.  Mix well and refrigerate at least an hour.  Serve on any type of lettuce. My husband loves it on a fancy croissant roll. It's great for potlucks or to keep for a quick lunch. A true cool Summer delight.
