Spring Salad

  Beet and Sunflower sprout salad:  Approximately 2 cups of sunflower sprouts, 5 med. beets sliced, 1/2 cup of chopped walnuts, a handful of dried cranberries, and 2 tblps. feta cheese
 Dressing:  2 tblsp. agave nectar, 1 tblsp. berry vinegar.
This has been my addiction since my beets came in.  Its crunchy, sweet and so full of color!   Enjoy
