Summer Solstice Celebration

Summer. Oh, summer summer. Lemons and Sunshine .

 I am fortunate to have an Eureka Lemon tree, it produces lemons virtually year round.  I use them in a variety of ways, but the best way to use them is juicing. Leave on a little pith for extra nutrients. Juice, then add it to your favorite salad dressings, teas and tinctures. Save the peals, then juice them for a homemade cleaning solutions.  Just add a little baking soda, mix and see the results on any surface.  It works great on dirty finger and toe nails.
It also gives your juicer a good cleaning.

Blue Belly and Sunshine

This is my Blue Belly Lizard.  He enjoys morning push ups, sunbathing and catching insects in the garden.  While you may know that lizards are cold blooded, they actually need the sun for vitamin D.  An extremely important hormone that regulates your metabolism.

Stove Top Quiche:
Chopped Broccoli
Diced Zucchini
2 scrambled eggs
Cheese
Fresh Tomatoes
any seasoning you like :)


Step 1:  In a 9" skillet (mine is cast iron), turn heat to high and add a tablespoon of olive oil, and a pinch of crushed red pepper. However red pepper is not necessary. If you like it spicy, add more. Any flavoring you like.  Sometimes I am really crazy and add fresh basil or spinach to this dish, but only after I add the vegetables. I use any dark green thing in my garden or refrigerator. It is up to you to create your own personal dish.
Next 2:  Toss in vegetables until they sizzle.
Next 3:  Turn heat to low, and pour eggs over the vegetables.
Next 4:  Add whatever the hell kind of cheese you like and none if you don't.  Personally I like a little Assiago and Feta, it make the dish seem more Quiche like to me.  I have also resorted to Sharp Aged White Cheddar, and let me tell you, it was a very good mistake.
Next 5: Cover and let bake on the stove for approximately 8 minutes.  Actually I'm not really certain how long it will take on you stove.  You may have an electric stove top and you may not be cooking on cast iron at sea level.  But no worries, you can uncover it anytime you like to check your dish.
Next 6: When the cheese is melted and the eggs look firm, it's done.
Next 7: Top with fresh sliced tomatoes, tomatillos, salsa, hot sauce even bacon if you wish.
The secret to this wonderful dish is, you can make it whatever you want.




Sunflower Sprout Salad



Crunchy, sweet and so full of color!   Enjoy

 Sunflower sprout salad:  Approximately 4 cups of sunflower sprouts, 5 med. beets; baked and sliced, 1/4 cup of chopped walnuts, a handful of dried cranberries, and 2 Tablespoons feta cheese and 2 sliced celery stalks.
 Dressing:  1 Tablespoons agave nectar, 3 Tablespoons balsamic vinegar.  

Christmas Parlor

After watching the movie Elf, I had to make white paper chain snowflake garland and hang it throughout our home. In my reading parlor, I put up a small frosted tree, with lots of sparkly ornaments. Since this picture was taken, I have added many more layers of shinning garland. I decorated the office with our family tree and more garland.



Christmas always gets me crafty.  I love my house at Christmas, I love all the sweet items, and lights.  Hope your Christmas makes you feel JOYFUL!
